Awesome Roasted Tomatoes & Shrimp Recipe
Preheat oven to 450 Degrees
Allow 45 total minutes: prep
& cook time
6 tomatoes cut into eighths
1 leek stalk sliced
Olive oil
4 cloves garlic, minced
Salt & Pepper
1lb of peeled and deveined raw
shrimp
Fresh chopped parsley
2 lemons
Feta
Place tomatoes, leeks, olive oil, garlic, and S&P in a baking dish and stir well.
Place in oven, for 20 minutes.
Remove dish from oven.
Add shrimp, parsley, lemon juice and feta into the dish and stir all of the ingredients together.
Place the dish back into the oven and allow the shrimp to cook…about 10 minutes or all of the shrimp have turned pink.
Serve over cooked pasta.
